Diet Coke Brownies Recipe!

Want some chocolate but don’t want the calories? Grab a can of cola, brownie mix and some egg whites (optional) and voila – you have fresh baked, melt-in-your-mouth brownies that are so low in fat, they are only 1 Weight Watcher Point. Follow along and enjoy!
Ingredients:
- Box of brownie mix or chocolate cake mix
- One can (12oz) of diet cola
- 1/4 cup of egg whites (optional)
- Fat-free Cool Whip (optional topping)

How-to:
- Pre-heat the oven to 350*F
- Mix brownie/cake mix, cola and optional egg whites
- Pour into baking cups (fill 3/4) – if using cake, fill 3/4 glass bakeware
- Bake for 14-16 minutes (cupcakes) 20-22 minutes (cake)
- Let cool and top with fat free Cool Whip!

These brownies are perfect for parties, bake-sales, snacks and no one will even know the difference! They are quick and easy and each box makes about 15-20 cupcakes and they will last for about a week if kept covered. Enjoy your new-found, guilt-free, favorite chocolate baked goods!

Do you know the points?
Yes! If you make the cupcake-size portion, each one is only 1 point. If you make a brownie cake, a 3×3 piece of the cake is only one point as well – even if you use the fat free cool whip as a topping. Enjoy!
Ingredients say 1 can ( 8 oz). A standard can of soda is 12 oz…which is correct?

What is cool whip? have never seen it in the shops – is it just a US thing?

I just made these, and was wondering if anyone else’s came out chewy? I made them in a 9×13 and wasnt’ sure if maybe cupcakes would turn out better. Anyway, just curious. Thanks for sharing this recipe, tho!!

I made these and used the Weight Watchers online recipe builder to calculate pts and they came out to be 2 pts each, and that was if you were able to get 20 cupcakes out of the mix, which I was not. I did spill some of the mix, but not sure how much, so that may have altered how many cupcakes I made. Not sure if there is a specific brownies mix I should have gotten that would make it fewer points. If so please let me know! They were very good even if not 1 pt each!

made them today, wish they are more chocol-ate-y but not bad for diet food. i used a can of cherry coke zerro and made in to mini-muffens, will share at work!!!
Okay. I just put the cupcakes in the oven. Mixture was VERY runny. Hopefully they taste good.
I used betty crocker low fat family size brownies. I made 12 cupcakes. It came out to be 4.5 points per cupcake..I don’t know what brownie mix you would use to get 1 point cupcakes???
